Just making a small collection as time goes on of recipes I like ^_^ When looking up recipes online I just remove the meat or just replace the meat with a vegetarian substitute. I may just link recipes over here over time and then write down the modifications I used for the recipe...
(I constantly lose the paper ones anyway so this should help me going forward.. hopefully lol)
Best macaroni and cheese I ever had
Main Recipe
- 1 brick cream cheese
- 1 box penne pasta
- 2 jars of alfredo sauce
- 2 cups of mozzarella cheese
- 2 tbsp garlic (minced)
- 2 cups heavy cream
- 1 cup vegetable stock
Spices
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tbsp fresh parsley
Instructions:
1. Preheat your oven to 400*F
2. In a LARGE casserole dish add in the following evenly inside: cream cheese, pasta, alfredo sauce, 1 cup of mozzarella cheese, spices, garlic, heavy cream, and vegetable stock
3. Place your casserole dish in the oven to bake for 40 minutes.
4. Once baked, remove the casserole dish from the oven and mix everything thoroughly!
3. Add another layer of mozzarella cheese and parsley.
4. Place your casserole dish back in the oven but this time set it to broil to melt your cheese. (check constantly not to burn it probably 2-5 minutes should be enough)
5. Once done, remove casserole dish from the oven and plate to enjoy (:
Green Bean Casserole
Main Recipe
- 2 cans of green beans
- 3/4 cup milk or heavy cream
- 1 can of campbell's condensed mushroom soup
- 1 cup of crispy fried onions ( any brand works )
Spices
- 1 tsp salt
- 1 tsp pepper
Instructions:
1. Preheat your oven to 350*F
2. In a baking dish 9x13 mix in cream of mushroom soup, milk, salt and pepper.
3. Then add green beans and 1 cup of crispy fried onions.
4. Bake 30 minutes or until hot. ( I prefer to wait until it's bubbling on the top ).
5. Take out of oven and enjoy =)
Spinach Artichoke Casserole
Main Recipe
- 14 ounces canned artichokes drained and blended (1 can)
- 1 cup cream cheese softened (1 brick)
- ½ cup mayonnaise
- ½ cup sour cream or plain greek yogurt
- 2 cups of shredded mozzarella cheese divided
- 1 tablespoon of Dijon mustard
- 4 ounces of fresh or frozen spinach ( about 3 cups )
- note: if using frozen spinach thaw it first
Spices
- 1 tsp salt
- 1 tsp pepper
- 1 tsp onion powder
- 1 tsp garlic powder
Instructions:
1. Preheat your oven to 400*F
2. Lightly grease a 9x13-inch baking pan with nonstick spray
3. Make sure the artichokes are drained and blended before proceeding.
4. In the baking dish add and mix all of the ingredients listed above until well combined.
5. Bake for 25-30 minutes, until the top of the casserole is golden brown.
6. Take out of oven and enjoy =)
